Tasting Notes
Nose: Initial delicate wisps of peat smoke, almost as if wafting from distant incense, intertwine with sweet dried fruits – think raisins, dates, and candied orange peel. There's an underlying nuttiness, perhaps roasted almonds, and a touch of sandalwood or old leather. A subtle floral note, reminiscent of cherry blossom, emerges with time, lending an ethereal quality.
Palate: The entry is remarkably smooth and sophisticated. The peat, while present, is gracefully integrated, acting more as a savory spice than an aggressive smoke bomb. Rich dark chocolate and espresso notes are prominent, balanced by a vibrant fruitiness of blackberries and plums. The influence of Spanish oak brings forth elegant tannins, hints of clove, and a delightful marmalade bitterness. A whisper of saline adds complexity, hinting at coastal air, even with Yamazaki's inland location.
Finish: Long, warming, and exceptionally complex. The peat gently fades, leaving behind a lingering smokiness blended with dark fruit and a rich, subtle spice. There's a pleasant dryness from the oak, inviting another sip, and a return of that delicate, almost spiritual, floral and woody aroma. The finish is persistent, evolving with notes of worn leather and a faint sweetness.
