Tasting Notes
Nose: A captivating and complex nose presents an immediate rush of intense, earthy peat smoke, reminiscent of a crackling bonfire by the sea. Beneath this robust smoke, notes of briny seaweed and iodine intermingle with sweet, stewed orchard fruits like baked apples and pears. A delicate vanilla sweetness from the oak emerges, alongside hints of lemon zest, damp earth, and a subtle salinity.
Palate: The palate immediately confirms the high proof, delivering a powerful yet surprisingly clean and oily mouthfeel. The peat smoke is assertive but not overwhelming, offering a more medicinal and tar-like quality than on the nose, balanced by a beautiful sweetness. Rich dark chocolate and espresso notes unfold, mingling with spiced fruitcake, black pepper, and salted caramel. A maritime influence persists, evoking a crisp ocean breeze and a touch of mineralality. Despite the lack of age statement, there's a depth and integration that belies its youth, showcasing the quality of Kilchoman's spirit.
Finish: The finish is remarkably long and warming, with the pervasive peat smoke lingering gracefully, evolving into a more ashy and dry character. Sweet oak tannins emerge, accompanied by traces of tobacco leaf, dark fruit, and a final, satisfying whisper of sea spray. The spice notes from the palate gently fade, leaving a delightful and memorable afterglow.
About the Distillery
Kilchoman is Islay's farm distillery, established in 2005. It's unique in that it's one of the few distilleries to conduct every stage of whisky production on-site, from growing its own barley to malting, distilling, maturing, and bottling. This dedication to tradition and quality results in whiskies that are deeply expressive of Islay's terroir, often characterized by a distinctive farmy and robust peat smoke profile.
