Tasting Notes
Nose: A sophisticated and intriguing start, displaying ripe red apple and pear notes from the cider cask, intertwined with a distinct malty sweetness reminiscent of caramelized biscuit and a hint of dark chocolate. Underneath, a classic bourbon backbone of vanilla bean, toasted oak, and a subtle baking spice medley of cinnamon and nutmeg emerges, adding depth and complexity.
Palate: The palate is remarkably balanced and vibrant. Initial sweet waves of baked apple pie and a delicate honeyed malt character coat the tongue. This quickly transitions to a richer, chewy texture with notes of dried fruit – think figs and raisins – alongside a gentle oak spice and a hint of espresso. The bourbon's corn sweetness provides a soft counterpoint to the more assertive fruit and grain influences. Despite the unknown proof, it feels smooth and well-integrated, suggesting a thoughtful blending process.
Finish: A medium to long finish that elegantly fades with lingering notes of sweet orchard fruit, particularly a crisp apple, and a warm, bready malt.
