Tasting Notes
Nose: A captivating and delicate bouquet, opening with bright citrus peel (lemon zest, mandarin) and green apple, evolving into floral notes of honeysuckle and a subtle hint of fresh cut hay. Underlying sweetness of vanilla and shortbread biscuit, with a whisper of distant campfire smoke and a mineral earthiness.
Palate: The palate arrives with a surprising richness, a vibrant interplay of sweet and savory. Initial burst of honey and malted milk, followed by a crisp orchard fruit character (pear, unripe apricot). Mid-palate reveals toasted nuts, a touch of white pepper spice, and a delicate herbal note reminiscent of spearmint or dill. The Hogshead influence introduces a subtle oak structure, not overpowering, but lending depth and a pleasant dryness.
Finish: A clean, lingering finish that is remarkably well-balanced. Sweet malt and gentle spice slowly fade, leaving behind a delightful aftertaste of baked apple, light caramel, and a whisper of saline minerality that invites another sip. The finish is medium-long, elegant, and exceptionally clean.
