Underlying notes of dried dark fruit, particularly fig and raisin, intertwine with a pleasant oak char and a faint whisper of roasted nuts. The high proof is present but well-integrated, suggesting a robust experience.

Palate: The palate immediately delivers a powerful yet surprisingly smooth burst of flavor. Sweet caramel taffy and buttery toffee lead, seamlessly transitioning into a peppery spice kick of rye and black pepper that tingles the mid-palate. Dark chocolate and espresso notes emerge, balanced by dried cherry and plum. The oak influence is confident, offering a pleasant dryness and a touch of roasted bitterness that prevents it from being cloying. Viscous and full-bodied.

Finish: Long, warm, and lingering, the finish coats the mouth with notes of dark caramel, toasted oak, and a persistent, pleasant spice. A beautiful interplay of sweet vanilla and fading char persists, leaving a memory of spiced fruit and a satisfying dryness that invites another sip. The proof manifests as a comfortable, warming glow without harshness.

https://takeyourpickliquors.com/products/2025-old-cassidy-rare-character-whiskey-company-old-cassidy-kentucky-straight-bourbon-whiskey-123-proof
